Cheesecake Cookies

1/3 cup butter, melted
1/3 cup brown sugar, packed
1 cup of flour
1/2 cup walnuts, chopped
mix in large bowl and stir in melted butter and mix with your hands until light and crumbly. Remove 1 cup to be used later as the topping. Place the remainder in an 8 inch square pan and press firmly. Bake at 350 for 12-15 minutes. Then...
8 oz cream cheese
1/4 cup sugar
1 egg
1 Tbsp lemon juice
2 Tbsp milk
1 tsp vanilla
Beat the cream cheese until smooth with the sugar. Beat in the egg, lemon juice, milk, and vanilla. Pour this onto the baked crust and top with reserved crumbs. Return to a 350 oven and bake for a bout 25 minutes. Cool thoroughly, then cut into 2 inch squares. Makes 16, Recipe can easily be doubled. Keep Refrigerated.
I have some good news...Daddy's home!! He's been in Memphis this week and so we are all happy when he is home. The girls went CRAZY when he walked in. Aubrie actually had her pants around her ankles because she just got off the potty and so she was waddling as fast as she could like a penguin to get to him. She's doing really good with her potty training. Tonight she stood up and said, "uh oh, it's stuck!" and picked a wedgie and then said, "Ah, all better. Thumbs up!" hahaha.
Adam is really busy this time of year. He doesn't do the auditing that happens the first of the year. Instead, he audits the IT systems that produce the financial statements that are audited the first of the year. So he's meeting deadlines and was working 12 hours days while he was in Memphis. We're so thankful he has such knowledgeable co-workers that work so hard and help make his job easy to do...even on 12 hour days.
A special congrats goes out to Stetson Steven. The Hatters had a big win tonight against ETSU. Can't wait to see him at work as a division I coach!! (To learn more about Stetson Steve, click here) And of course our Belmont Bruins brought home a big win!
