Chocolate Chip Muffins

This morning started off right with some chocolate chip muffins.  These were my favorite growing up and they are pretty easy to make.  And if you have a hungry herd waiting at the breakfast table, slap these suckers in a mini-muffin tin and they will be ready in half the time!

Oatmeal Chocolate Chip Muffins

1/4 cup margarine, melted
1 cup milk
1 large egg
1 tsp vanilla
1 cup old fashioned oats

Mix all of these wet ingredients and set aside.  Then mix...

1 1/3 cup flour
1/3 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup mini chocolate chips (I use regular)

Preheat oven to 400 and grease muffin tin.  Whisk together the wet ingredients and let them stand for 10 minutes.  Combine dry ingredients in large bowl.  Combine wet with dry and fold in the chocolate chips.  Spoon batter into muffin cups.  Bake for 20-22 minutes, until toothpick inserted in center comes out clean.  Cool for 5 minutes.

You know, as I started to type this, I feel like I've already shared this recipe.  I'm starting to "label" each post so I can now look up which recipes I've shared.  I just haven't gone back that far.  Something to add to my to-do list!  We had a busy day today at our house.  We finished raking leaves and did some work around the house.  We put the girls down early for a nap because we wanted to go to the Belmont game around 4 and Aubrie chose to sing instead of nap.  We enjoyed a close game with Mercer this evening.  We did realize that if we want to watch any of the game, we will need to think about getting a sitter.  And I must brag that Amy Grant held the door for me and the girls while Vince Gill chatted up Adam.  Yes, you heard me.  :)  Vince Gill is a close friend of Belmont's head coach and he knows Adam from watching him.  Don't worry, we aren't THAT cool.  haha. 
Adam's mom made this cheer outfit for Aubrie and now Emilie gets to wear it.  Like the artwork in the back ground hanging sideways?  It kind of reflects Emilie's personality...wild.
