I went ahead and made some Christmas Crunch for us to take over there. Adam got sour because he thought I was going to give them all of it, but I kept a bag for him. It's funny because this is his Grandma Huhnke's recipe and on the card it says "Serves: Adam and a few others Ha!" instead of serves 16. It's a good sweet and salty treat and pretty easy to make. You can use any of your favorite cereals and there are a lot of variations you can do, some recipes even use peanut butter. Here is the recipe that I made.
Christmas Crunch
from Grandma Huhnke
5 cups of rice Chex
4 cups of cheerios
2 cups of dry roasted peanuts
1 8 oz bag of round pretzels
2 lbs white chocolate bark melted
In a giant bowl, mix cereals and melt the chocolate in the microwave and pour over cereal mixture. Mix well and drop spoon fulls on wax paper and let dry. When it is cool, break apart. (I leave mine in large chunks) You really can use any cereal. I think my mom thought about doing popcorn in her mix. The original recipe from Grandma calls for 3 cups of peanut butter crunch cereal and 3 cups of the others, but she substitutes the peanut butter crunch cereal with another kind.
I also made Mississippi Mud Cake tonight. It was one of my favorites when I was younger. Adam said it is similar to rocky road. Whatever it is, it is delicious!
Mississippi Mud Cake
from mom's recipe box
1 cup of butter
2 cups of sugar
4 eggs
1 tsp vanilla
1 2/3 cup flour
2/3 cup cocoa
1/2 tsp salt
2 tsp baking powder
2 cups chopped nuts
1 10 oz bag of mini marshmallows
Mix butter and sugar until light and fluffy. Add eggs and vanilla. Then add flour, cocoa, salt, baking powder, and nuts. Pour into a greased 13x9 pan and bake at 350 for 35 minutes until cake is barely done. Put marshmallows on the top and bake 5-10 minutes until golden. Let cake cool. Add icing.
Icing
1/4 cup butter
1/4 cup cocoa
1 tsp vanilla
1/8 tsp salt
1 1/2 cup powdered sugar
2 Tbsp milk

All in all, we had a pretty good day. Church was great. We got to eat lunch with Tia. Adam and the girls got to rest. Well, Aubrie was supposed to nap, but she didn't. About an hour into her nap, she got to singing pretty loud and so I went in and told her that she needs to hurry and take a nap because when she wakes up, we will go see Max and Reese! She gasped, "OH BOY! Max and Reese! VACATION!!!" So I left her room and she cried a little but then was quiet. But only for five minutes. Then she began singing again. I went and got her when it was time to leave and she was standing on her bed. Adam suspects she jumps on the bed. Miss Emilie has slept in the last two days. She has also been eating very well, so I suspect a growth spurt. Her 9 month appointment is Wednesday, even though she turned 9 months two weeks ago. She's growing so fast!
