Strawbaubries


I love the summer for many reasons.  I would rather it be 107 outside than a cold, cloudy day like we have here from December-February.  I also love the fresh produce.  I love going to the grocery store and spending the majority of my time in the produce section.  Aubrie's favorites this summer are by far corn and strawberries.  But she doesn't say strawberries.  She says Straw-baub-ries.  Aubrie Strawbaubrie.  She cracks us up. 

My neighbor Tony brought by a bag of okra, corn, and beans.  He also brought me some tomatoes and banana peppers from his garden.  I think the bag of okra and corn came from an Amish family he knows.  Luckily I got the Food Network Magazine to read at the lake and this Okra recipe was in it.  I didn't feel like making a batter and frying them.  This turned out great!

I also mentioned Candice's squash recipe from her mother yesterday.  She was kind enough to send it my way and I'd like to share it with you.  It is delicious and if you have a little one with few teeth, they will love it!


Squash Casserole
from Jan Mitchell

5-7 small squash sliced
1/4 yellow onion chopped
Salt
Pepper

Cover with water and boil for 10-12 minutes or until squash is tender. Drain and squash the squash. Pour back in pot and add:

2T butter
1 egg
4 slices American cheese
1/8 c milk
1/2 pack of crackers (Town House)
1 T sugar
Salt and pepper to taste

Mix together until cheese is melted. Pour in casserole dish and cover with buttered crackers. Bake at 350 for 25 min.
I also forgot to include this picture from the other night of Max giving Aubrie a hug.  :)  He lifted her off the ground.  So when Reese went to give her a hug, she tried the same thing and both girls tumbled to the floor.  It was too funny. 
 Today we went to the Y and I did chair yoga again.  The elderly man next to me was really relaxed because he kept passing wind.  I don't think he could hear it, but I kept snickering.  :)  When I got out of the Y, I had a message that someone wanted to see our house at 1:30.  This gave me two hours to get the house ready and clean.  I juggled cleaning, the dreaded vacuuming (in Emilie's mind), serving lunch, and putting Emilie down for a nap in those two hours.  It worked out pretty well.  The house was actually ready to show at 1:15 and I had a minute to sit down and text Adam to tell him how many dirty clothes he had left in the bathroom and how I feel that his side of the sink gets neglected.  :)  But really, he's a good guy.  He's so helpful around the house.  He's cleaning up tonight's dishes as I blog.  He's definitely super dad!
