Petey turns six!


Six years ago, our friend Andrew knocked on the apartment door to drop off our wedding present and it was Petey.  The best present ever!  He was his true self today.  Shredded a diaper, popped and chewed Aubrie's arm floaty.  Stole food from the girls while we weren't looking.  We took a rawhide and lit a candle and sang happy birthday to him.  Aubrie thought it was SO cool!  She blew out the candle for him and then cried because Petey wouldn't share his cake (the rawhide).  So I had to get a rice krispie treat and break it into thirds for our cake.  :)  If you want more Petey stories, you can click on the Petey tab at the top, under the heading.

I made chicken fried steak tonight.  Mmmm!  It was delicious.  I was really nervous because when you make chicken friend steak, you HAVE to do mashed potatoes and gravy.  And last time I did it, I flunked.  I have to tell a funny on Grandma Huhnke and I.  I made a Christmas dinner the day after Christmas for Adam's whole family who drove back to Nashville that day.  As soon as they got out of the car, dinner was ready except for the gravy.  So Granny said she would coach me and it just wasn't doing what it was supposed to.  She kept adding flour water and we would stir...add more, stir. Finally we realized the burner wasn't on.  We had a HUGE pan of gravy that night.  :)

I figured that I was 30 and it is high time I make gravy.  It can't be too hard.  And it wasn't.  With more coaching from mom on the phone and the right amount of patience, it turned out fine. 

Country Fried Steak

Cubed or tenderized round steak
Flour
Corn Flakes
Milk
1-2 eggs

I used two pie plates and one dinner plate.  In the first dinner plate, put 1/2 cup of flour.  Next you'll want a pie plate with eggs and 1 Tbsp water whisked together.  Finally, you'll want the last pie plate to have 1/2 cup of flour and 1/4 of crushed corn flakes, salt, pepper, and garlic powder (to taste).

Take your steak and dip it in the flour, then egg wash, and last coat it with the corn flake/flour mix.  Put it in a pan that has 2/3 Tbsp of melted crisco and cook it on medium high for about five minutes on both sides.  Make sure you keep 1/8 inch of oil in the bottom of your pan. 

For the gravy, when you finished with your last steaks, add 2-3 Tbsp of flour to the pan and use your whisk to stir it around.  You want your flour to soak up the oil and turn brown from the heat.  Next add at least 1 1/2 cups of milk and whisk quickly being careful to get all the bits of flour and milk incorporated.  Once it is smooth, you can switch to a spoon and let it bubble for at least a minute or two.  If it is two thick, add milk.  Salt and Pepper to taste.

Delicious meal!  The girls loved the steak and Emilie loved the mashed potatoes.  Aubrie is not really a fan. 

We have our inspection this coming Wednesday at 8 am.  I'm pretty confident that everything will be fine.  We are still looking for our next home.  I hope we find one soon!  Love to all!
