Roasted Pork Loin with Cider

I enjoy Sundays for many reasons.  I get to go to church and fellowship with my family.  I get to take a nap every once in awhile.  We spend the day doing things with the girls and I get to sit down and really plan out a menu because it is the one night that I can cook without kids climbing my legs.  So I usually try new recipes or something difficult that takes my attention.  Today I tried a new recipe.  But before I share, I'll show you the girls playing today.


Miss Emilie is walking a lot while pushing things.  She is also standing on her own and getting pretty brave.  It won't be much longer!

This is a favorite.  Aubrie gets in the house and Emilie tries to get in, too.  But Aubrie doesn't push her with her hands.  She uses her head to push her out.


It usually results with baby sister on the ground.  But if the mood is right, Emilie likes this game and keeps trying.  Today when Aubrie left the playhouse, she got in the house and was playing.  But then when she wanted out, she just dove out the window and flipped out.  She didn't cry or anything.  Just got up and went about her business.

So when I was at my parents house, I watched the Food Network while everyone was napping and caught Anne Burrell making this and I thought it sounded pretty good.  Adam loves apples and it seemed like a perfect fall recipe.  The only problem is that my grocery store doesn't sell a 6 chop pork rib roast.  So I bought the thick pork chops and tied them together to form a roast and made this dish.  The smells that filled our house were so inviting.  I can still smell the rosemary, sage, and thyme.  Take a look at her recipe online and give it a try.  You'll really like it and it is really good for toddlers because most toddlers like applesauce.  Both girls cleaned up their plates.  I ended up having to feed Aubrie her bites because she doesn't understand the concept of stabbing the pork and then scooping up the applesauce.  But they loved it!

And then to finish the night off, I made a pumpkin pie and we had that for desert.  Aubrie was so excited.  She reads a book about Dora the Explorer going out to find a pumpkin for her Abuela who then makes it into a pie.  I made the crust last night while I made the dumplings, so all I had to do was make the filling and bake.  Pretty easy stuff.  The girls were playing upstairs tonight so before they went to bed, I cut a couple of slices and took it up for us all to share with some decaf coffee for dad. 

But a couple of bites in, I knew I forgot something.  Great.  I forgot the sugar.  :(  It was not good at all.  That didn't stop Emilie from double fisting it and shoving it into her mouth. (Which got us excited because we hope she'll do that with her birthday cake in a couple of weeks.) Aubrie enjoyed mostly the whip cream.  So I looked online as to what to do if you forget the sugar.  People had all kinds of crazy ideas, but the one I saw the most was to scoop out the entire pie filling and just add the sugar and scoop it back into the pie.  It was heartbreaking, but it turned out to work pretty well.  It just looks like a cream pie.  It definitely tasted better!  Thank goodness I didn't leave out something like the eggs...
