Italian Fried Steak with Roasted Pepper Pesto

Today I decided to make a big lunch since we were going to our usual Mexican joint for dinner.  This is one of the dishes I cut out from BH&G and it turned out to be delicious!!

Italian Fried Steak with Roasted Pepper Pesto

1/2 cup fine dry bread crumbs
1/2 cup grated Romano or Parmesan cheese
1 egg
2 Tbsp water
Beef cubed steak
1 12 oz jar of roasted red sweet peppers, drained
2/3 cup fresh basil leaves

In a shallow dish combine crumbs and half of the cheese.  (I had Italian bread crumbs)  In another shallow dish, beat together egg and water.  Take cubed steaks and salt and pepper then dip in egg mixture, then crumb mixture and press lightly to coat.  In a 12 inch skillet, heat 1 Tbsp olive oil over medium high heat.  Cook each side for about 5 minutes on each side, adding more oil as needed.  Remove to a serving platter and keep warm.  Carefully wipe the skillet clean.  For sauce, put drained peppers and remaining Parmesan cheese in blender and process until smooth.  Fine chop basil and set aside.  Add pepper mixture to the skillet and heat.  Poor sauce over the steak and sprinkle with basil.  I had an Italian cheese mix from Kraft that I sprinkled on the top and microwaved for 15 seconds, then added the basil.

We had a pretty relaxing day today.  We had to get the house ready for a showing because it was getting appraised today.  But that was a piece of cake since Adam was home.  I had a meeting this morning to go over the curriculum for bible study this year.  I'll be teaching a 3-4 year old class on Wednesdays.  I'm so excited to be teaching!  I'm going to enjoy this little kids.  It starts next week.  After lunch, Adam got to lay around and watch tv, get a nap in.  I cleaned up the kitchen and joined him on the couch.  It does feel guilty to lay around when you know you have so much work ahead of you.  But I've missed hanging out with him and I've really enjoyed having him home this weekend. 

Josie joined us for dinner tonight.  It was good to see her and we are so glad she is back in Nashville and closer to us.  Adam gave Petey a bath and both girls managed to get involved and get wet.  It was quite a mess.  We used up a lot of towels tonight.  Adam has the TCU vs. Baylor game on and it is nice to think that Fall is right around the corner.  I'll leave tonight with a couple more pictures from our TX trip that didn't make it earlier because of slow Internet.
