Caramel Apple Cheesecake

A group of friends started an apple pie bake-off a couple of years ago.  It started with two people and it was just apple pie.  It grew and now there are sometimes up to 6 desserts and now it is anything apple.  I entered this caramel apple cheesecake one year and it was a winner!  It is a Paula Deen recipe, but I have altered it just a little.  It is absolutely delicious and pretty easy!!

Caramel Apple Cheesecake

1 graham cracker crust for a 9 inch pie plate (see below)
2 - 8 oz softened cream cheese
1/2 cup sugar
1/4 tsp vanilla
2 eggs
4 Tbsp caramel topping
3 large granny smith apples
1/3 cup chopped walnuts

Heat oven to 350 degrees.  Peel apples and slice.  Take 1 heaping cup and put it a pot on the stove with 1 Tbsp of caramel topping.  Put it on low heat and stir occasionally, covered, to cook the apples.  Meanwhile, in large glass bowl, beat cream cheese, sugar, and vanilla until creamy.  Add in eggs until mixed.  Put cooked apples on the graham cracker crust and spread around.  Pour cheesecake mixture over the top.  Bake 30-35 minutes, until center is firm.  Cool at room temperature.  After it is cooled, take remaining apples and 3 Tbsp of caramel and cook on the stove top.  Add to the top of the cheesecake and sprinkle with chopped walnuts.  Cool in fridge until ready to serve.

Here is Paula Deen's version.  She uses canned apple pie filling and pecans.  Not that big of a difference.

It was a library day for us.  We went with Adam's parents and met Tia (Amanda) for lunch.  We brown bagged it and ate outside in the courtyard.  It was pretty warm, but we had a good time.
