I Skinny Cow

Some people drink.  Some people smoke.  I skinny cow.  Have you had the skinny cow ice cream treats?  I get the chocolate truffle bar that is only 100 calories.  That is probably the best treat you can find for that many calories.  So delicious.  Sometimes after dinner, when Adam is playing with the princesses, I step outside and enjoy one.  All by myself.  Nobody crawling on my lap, nobody wanting a bite.  It's all mine.  :)

Tonight we had chicken and apple sausages on the grill.  They are delicious.  You can buy them buy the bulk at Costco, but I bought them at Kroger before committing to bulk.  The girls wolf them down like candy.  I paired it with a grilled summer vegetable salad that I saw one time on Good Morning America.  Wolfgang was the guest and was grilling outside.  I love grilled veggies.

Grilled Summer Vegetable Salad

1 red bell pepper
1 yellow bell pepper
1 ear of corn
1 or 2 zucchini
1 or 2 yellow squash
1 red onion
cherry tomatoes

Sauce
1 roasted jalapeno
2/3 cup lime juice
1/3 cup cilantro
1 tsp cumin
1/4 cup olive oil
2 Tbsp honey

Wash the vegetables and slice zucchini, squash, onion, and bell peppers into long slices.  Toss all vegetables in  olive oil and grill.  For the sauce, I roast the jalapeno on the grill while it is warming up for the vegetables.  Toss everything for the sauce into the blender.  I serve the sauce on the side, or you can just toss everything together.  I also cheat and buy one of those plastic limes and use that for the juice because 2/3 cup is a lot of lime squeezing.  It's really delicious.  I like the sweet, but spicy, sauce. 

Today was a library day.  We ran into our good pal, Teague.  That was exciting for Aubrie.  She chased him all around the library and they seem to talk their own language.  We enjoyed seeing the puppets.  We sat in the very front and when they asked for somebody with a name, Aubrie raised both her hands and they called on her but then she was too shy, so I had to tell them her name.  They were singing the name game song....Aubrie Bobrie Fo Fobrie...She enjoyed that.  :)

Since we went to the library, visited with Tia, and ran into some friends, we decided to eat out.  I got Emilie a grilled cheese which she was snacking on in her seat.  Pretty soon it was quiet in the backseat and this is what I found
Can you see the sandwich still in her hands?  She even has some on her chest.  Too cute.  It's hard keeping up with big sister and all her activities!  She's gradually starting to do one nap a day, but it is hard on her.  After the girls were up from their naps, I ran to the Y, because after all, this is boot camp week.  I went to the one at the church near our house.  I only dropped them off for 15 minutes and read a magazine in the lobby.  Emilie cried for 10 of the 15 minutes but was then fine.  They said I should have brought my clothes...I could have had a decent workout!  Yay Emilie!  She's just growing so fast.  She crawls everywhere.  She's no slow poke either.  She loves shaking her head no.  She also bounces and starts yelling when we all start singing and dancing in the living room.  You can tell she can't wait to do everything that sister does.  I hope sister is ready!
