Back to the grind

We made it back safely from our 10 day vacation at the lake.  It was so nice to step away and get out of town.  I was so grouchy on the way home yesterday because I knew I was coming home to laundry and having to keep my house spotless for showings.  But we had such a good time.  Adam and I were talking and we haven't been this tan since BK.  (before kids).  It's different now.  We HAVE to go in the sun if Aubrie wants to swim.  There's no hiding inside with the AC or sitting in the shade.  We have two little ones that love to swim, so we just slather on the sunscreen and we are there!

Let me tell you one last lake story before I move on.  It's about Marvin.  He's a turtle.  He suns on our neighbor's jet ski lift.  All week we've been eyeing Marvin.  We wanted to catch him so Aubrie could see what a turtle looks like up close.  So for the first part of the week, Adam tried to catch him with just his hands.  Because he's quick like a cat....not.  So then he found a net and we both tried to get him with the net.  As soon as I would make one step in his direction, even if it was from 10 yards away, he would plop back in the water. 

Well, it was Sunday and I was packing up and Adam was taking Aubrie for one last swim before we left and Amanda came in and told me that Adam finally caught a turtle!  I went out and it wasn't Marvin, but it was probably his little brother.  I was so excited!  We probably were more excited than Aubrie was.  He was a cutie.  We kept him in a pot and put him back in the lake when we were done.

We really enjoyed ourselves.  Thanks Grandpa and Grandma Huhnke for hosting us!


Well, while we were at the lake, Emilie started crawling.  When we got home last night, Emilie crawled up to Adam and pulled herself up to standing.  Great!  I need to lower the crib!  I'll do it tomorrow.  We had to get some things unpacked and get the girls to bed because Adam needed to get to bed as well as he was leaving early for Chicago.  When Emilie started crying this morning at 6 am, I went in and found her standing in her crib, leaning over the rail, about to flip herself out!  She won herself a trip to mommy's bed for the next hour of sleep.  So now it is lowered...much safer.
I made teething pads because finding one for my crib was impossible.  Aubrie left some pretty nice teeth marks for Emilie to live up to.  I think she really likes the crib lower because she peeks through the bars and looks for me to come in.

I ran to the store last night while Adam gave Petey a bath.  He needed the lake water washed off of him.  I took advantage of Adam being home and stocked up on some groceries.  I also didn't want to eat out and wanted to cook something.  I went with Rachel Ray's peasant pasta. 


Peasant Pasta
  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 1/2 pound hot Italian sausage, available in bulk at butcher counter or, 2 links, casings removed
  • 1 pound sweet Italian sausage, available in bulk at butcher counter or, 4 links, casings removed
  • 3 to 4 cloves garlic, chopped, optional
  • 1/2 cup chicken or vegetable broth
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper
  • 1 cup frozen green peas
  • 24 leaves fresh basil, torn or thinly sliced
  • 1 pound penne rigate pasta, cooked to al dente
  • Grated Italian cheese, for passing

Directions

Heat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan. Add sausage meat. Crumble sausage meat as it browns. Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes. Season with salt and pepper. Stir peas and basil into your sauce to combine. Toss hot drained penne rigate in pan with the sauce, then transfer pasta to serving bowl.

I add red bell pepper to mine, because I love bell pepper.  It's pretty good and you'll have leftovers for another night.
