We had leftovers from yesterday for dinner...
Salmon Ravioli

9 oz cheese ravioli
9 oz or more spinach leaves
12 oz or more salmon filets
3 Tbsp butter
3 garlic cloves
1 lemon
Parmesan cheese
Cook ravioli and set aside. In a large skillet, heat olive oil in pan. Sprinkle salmon with salt and pepper. Cook 6-8 minutes until flaky. Remove and keep warm. Add spinach to skillet and cook until wilted. Melt butter in skillet with chopped cloves. Squeeze half lemon to sauce. Combine everything and add the Parmesan cheese.
I use a lot more than 9 oz of spinach. Yesterday I did 5 salmon filets so I did 5 Tbsp of butter and 4 garlic cloves so it wouldn't be dry. I also used a whole lemon. I recommend having 2 lemons and slicing the other one for people to squeeze onto their salmon.
It was another typical day. A trip to the Y. Emilie was a superstar. I worked out for 50 minutes and she didn't even cry when I left! After the Y, I had a laundry marathon. All that is left is ironing. Bleh. Oh, and hey Tia, is this how you play the piano???
Emilie thinks it is. She's so close to cruising. She loves to stand and she loves to assume the bear crawl position when hanging out on the floor. She's too funny. The girls enjoyed some daddy time today.
A house down the road put their house on the market on the 7th of July and had a contract on it 3 days ago. Now that's just got me sick....
