Recipes you missed

Here are some recipes you missed that were on my facebook

Corn Queso
this recipe is from my good friend, Sam, who brought this to a cinco de mayo party one year

2 cans light/yellow corn (not drained)
1 can Rotel tomato and chilies (you can get mild or hot)
1 can diced green chilies (not drained)
8 oz soft cream cheese, cubed
1/2 lb velvetta cheese, cubed
1 clove minced garlic
1 tsp cumin
1 tsp chili powder (put less or add more if you like it hot)

melt it all together.  you can drain the corn and rotel if you like your queso thicker.

Strawberry Torte
this recipe is from Adam's grandmother, Verdene

1 quart of chopped strawberries
1 cup powdered sugar
1/2 cup soft butter
1 large egg
3/4 lb crushed sugar wafers (those waffle looking cookies with cream in the middle)
1 pint whipped cream

You can make this in one large serving dish or make individual serving cups.  I prefer individuals so that when there is leftovers, it isn't soggy.I made them in a cosmo glass and garnished it with a strawberry on the lip of the glass.  This is what you do:
Layer bottom with half of sugar wafers.  In a bowl, cream the butter, sugar, and egg.  Spread this cream over the top.  Then layer strawberries, whipped cream, and sprinkle with the rest of the crushed wafers.  Enjoy!!

Teriyaki Marinade
this recipe is my mother's and she got it from an Asian friend.  it is delicious!!!

1 cup soy sauce
1/2 cup sugar
1/4 cup cooking sherry
1 clove grated or crushed garlic
2 tsp of fresh grated ginger OR 1/2 tsp ginger powder

you can marinate overnight, but at least 4 hours.  You can do pork, chicken, or beef.  We made K-Bobs the other night with beef and they were delicious.  We used poblano peppers, red and yellow bell peppers, zuchinni, and red onion.  YUM!!!

Strawberry Trifle
this is Adam's favorite summer treat.  it is way too easy, you have to give it a try!

1 box angel food cake mix
1 tub of whipped cream
1 box of vanilla pudding mix
chopped strawberries
blueberries

Make the angel food cake in a bundt pan and let it cool.  Once cool, divide it in thirds and tear into bite size pieces.  Mix half the dry pudding mix with the cool whip.  Layer in a trifle bowl or pretty serving bowl in this order:  cake pieces, cool whip, strawberries and blueberries.  Do it three times and your last layer should be strawberries and blueberries.  Enjoy!
